Pumpkin Pie Squares

Ingredients

    5 lb (full box) Krusteaz Professional® Yellow Cake Mix 732-0180

    26 oz (3 1/2 cups) sugar

    1 oz (1/3 cup) pumpkin pie spice

    1 3/4 tsp salt

    32 fl oz (4 cups) evaporated milk

    16 oz (8) eggs

    8 fl oz (1 cup) water

    48 oz (6 cups) canned pumpkin

Makes 96, 2-inch squares

Method

    1. Place Krusteaz Professional Yellow Cake Mix, sugar, pumpkin pie spice and salt in mixer bowl. Using a paddle, mix on low speed 30 seconds.

    2. In a separate bowl, whisk together milk, eggs and water until blended.

    3. Add half of liquid mixture to dry ingredients. Mix on low speed 1 minute. Scrape bowl.

    4. Add remaining liquid mixture and canned pumpkin; mix on low speed 2 minutes. Scrape bowl. Mix on low speed 1 additional minute. Place batter in prepared full sheet pan.

    5. For convection oven, bake at 300°F 30-35 minutes; for standard oven, bake at 350°F 35-40 minutes or until toothpick inserted into center comes out clean. Chill thoroughly before cutting.
