Pumpkin Spice Pancakes with Maple Whipped Cream



    1 lb (2 cups) Krusteaz Professional® All Purpose Pumpkin Spice Baking Mix 734-0293

    2 large eggs

    10 oz (1 3/4 cups) cold water

    Maple Whipped Cream:

    4 fl oz (1/2 cup) heavy cream, whipped

    2 Tbsp maple syrup

    1. Place water and eggs in mixer bowl; add Krusteaz Professional All Purpose Pumpkin Spice Baking Mix. Using wire whisk, mix until well blended. Do not over-mix.

    2. Pour batter onto a lightly greased, preheated 365°-375°F griddle.

    3. Cook pancakes 1 1/4-1 1/2 minutes per side. Turn only once.

    4. Whip heavy cream with maple syrup.  Garnish with toasted pepitos, if desired.
