Lemon Herb Cod Fillets

Ingredients

    5 lb (full box) Krusteaz Professional® Tempura Batter Mix 733-0140

    50 fl oz (6 1/4 cups) cold water

    40 fl oz (4 1/2 cups) lemon juice

    1 oz (1/4 cup) ground black pepper

    1/4 oz (5 tsp) dried thyme

    20 lb uncooked fish fillets, cut into 3 oz pieces

Method

    1. Place water in mixer bowl; add Krusteaz Professional Tempura Batter Mix, lemon juice, black pepper and thyme.

    2. Blend with wire whisk just until blended.

    3. Coat fish pieces with batter. Lightly drain off excess batter.

    4. Fry in 350°F oil to the proper internal temperature, about 4 – 4 1/2 minutes.
