Apple Walnut Protein Muffins

Ingredients

    1 lb (3 ¾ cups) Krusteaz Professional® Protein Pancake & Baking Mix 731-0115

    8 oz (1 cup) water

    3 oz (1/3 cup) unsweetened applesauce

    2 oz (1/2 cup) chopped walnuts

 

Yield

1 dozen, 2 oz muffins (standard) or ½ dozen, 4 oz muffins (jumbo)

Method

    1. Place water and applesauce in mixer bowl; add mix. Using a paddle, mix on low speed 30 seconds.
    2. Scrape bowl and paddle. Continue to mix on low speed 30 seconds.
    3. Stir in walnuts.
    4. Scale batter evenly into greased or paper-lined pans.
    5. For standard muffins (#16 scoop): for convection oven, bake at 300°F 12-14 minutes; for standard oven, bake at 350°F 16-18 minutes.
    6. For jumbo muffins (#8 scoop): for convection oven, bake at 300°F 19-21 minutes; for standard oven, bake at 350°F 23-25 minutes.
    7. Cool muffins briefly in pans. Turn out while still warm.

    NOTE: When baking in a convection oven, turn muffins halfway through baking cycle.
