4, 7 gram packets yeast (included in box)
32 oz (4 cups) warm water (105°-115°F)
Filling
5 lb (10 cups) cooked lean ground beef
12 ea (1 1/2 cups) boiled, chopped large eggs
8 oz (2 cups) minced, caramelized yellow onions
1 Tbsp chopped flat leaf parsley
1 Tbsp salt
1/2 Tbsp black pepper
1 Tbsp granulated garlic
Method
For buns, place water in mixer bowl. Add Krusteaz Professional All Purpose Yeast Roll Mix then yeast. Using a dough hook, mix on low speed 1 minute. Scrape bowl.
Change to medium speed and mix 4 minutes.
Place dough on floured surface, cover and rest for 10 minutes.
Scale dough into 36, 3 oz pieces and roll flat.
For filling, combine beef, eggs, onions, parsley and seasonings.
Place 2 oz beef filling on the flattened dough.
Pull up the edges of the dough to encapsulate filling and pinch together to seal. Place buns on greased or paper-lined pans.
Proof for 1 hour or until double in size.
For convection oven, bake at 325°F 18-20 minutes; for standard oven, bake at 375°F 20-22 minutes.
