Ingredients
- 5 lb (full box) Krusteaz Professional® Banana Muffin Mix 734-0260
- 40 fl oz (5 cups) water
- 15 oz (5 cups) flaked coconut
- 20 oz (2 1/4 cups) crushed pineapple, drained
Method
- Place water and Krusteaz Professional Banana Muffin Mix in mixer bowl.
- Using a paddle, mix on low speed 30 seconds. Scrape bowl. Fold in flaked coconut and pineapple.
- Continue to mix on low speed 30 seconds.
- Using #20 scoop, fill prepared muffin pans.
- For convection oven, bake at 350°F 12-14 minutes; for standard oven, bake at 400°F 16-18 minutes.
