Place water in mixer bowl; add Krusteaz Professional® All Purpose Cookie Mix. Using a paddle, mix on low speed 45 seconds or until dough forms around paddle.
Using a #40 scoop, drop dough onto greased or paper-lined baking sheets. Lightly flatten dough.
For convection oven, bake at 325°F for 7-9 minutes; for standard oven, bake at 375°F for 12-14 minutes. Cool baked cookies.
After cookies have cooled, place ice cream on cookie, pressing down and smoothing off with a spatula. Place second cookie on top of ice cream and freeze until hard.
Roll finished cookies in sprinkles or drizzle with chocolate, if desired.
