Strawberries & Cream Double Fudge Brownies

Makes approx 48 servings


  • 20 oz (2 1/2 cups) hot water
  • 6 lb (full box) Krusteaz Professional® Fudge Brownie Mix 732-0620 or 4 lb Krusteaz Professional Ready to Bake Brownie Batter 732-0605
  • 16 oz (3 cups) white chocolate chips
  • 8 lb (12 cups) sliced strawberries
  • 32 oz (4 cups) ganache
  • 24 oz (6 cups) sweetened whipped cream


  1. Place water and Krusteaz Professional Fudge Brownie Mix in mixer bowl. Whisk until well-blended. If using Ready to Bake Brownie batter, pour batter in to a mixing bowl.
  2. Fold in the white chocolate chips.
  3. Scale batter into greased or paper-lined full sheet pan. If using Ready to Bake Brownie Batter, pour batter on to a 1/2 sheet pan and spread with a spatula.
  4. For convection oven, bake at 300°F 27-32 minutes; for standard oven, bake at 350°F 30-35 minutes. Bake Ready to Bake Brownie Batter according to instructions.
  5. Cool brownies. Top with strawberries.
  6. Drizzle ganache over strawberries.
  7. Freeze to set. Garnish with whipped cream.
