South Of The Border Breakfast Bake

Makes 48, 4x2-inch servings


  • 20 oz (4 cups) cooked and crumbled chorizo sausage
  • 16 oz (4 cups) shredded pepper jack cheese
  • 4 oz (2 cups) chopped green onions
  • 24 oz (5 1/4 cups) Krusteaz Professional® Buttermilk Pancake Mix 731-0120
  • 48 fl oz (6 cups) milk
  • 24 oz (12) eggs


  1. Layer cooked chorizo, pepper jack cheese and green onions in prepared 24 x 16 x 1-inch pan; set aside.
  2. Place Krusteaz Professional Buttermilk Pancake Mix, milk and eggs in mixer bowl.
  3. Using a paddle, mix on low speed 30 seconds. Scrape bowl and paddle. Continue to mix on low speed 1 minute.
  4. Pour batter over ingredients in pan.
  5. For convection oven, bake at 300°F 15-18 minutes; for standard oven, bake at 350°F 20-25 minutes. Casserole is done when knife inserted into center comes out clean.
