Pumpkin Spice Muffins
Makes 5 1/4 dozen, 2 oz muffins
Ingredients
- 5 lb (full box) Krusteaz Professional® All Purpose Muffin Mix 734-0120
- 30 fl oz (3 3/4 cups) water
- 25 oz (2 3/4 cups) canned pumpkin
- 1 1/4 oz (1/3 cup) ground pumpkin pie spice
Method
- Place water, Krusteaz Professional All Purpose Muffin Mix and remaining ingredients in mixer bowl.
- Using a paddle, mix on low speed 30 seconds. Scrape bowl.
- Continue to mix on low speed 30 seconds.
- Using #20 scoop, fill prepared muffin pans.
- For convection oven, bake at 350°F 12-14 minutes; for standard oven, bake at 400°F 16-18 minutes.
