Pumpkin Seed Muffins

Makes 4 1/3 dozen, 2 oz muffins

Ingredients

  • 5 lb (full box) Krusteaz Professional® Low Fat All Purpose Muffin Mix 734-5035
  • 38 fl oz (4 3/4 cups) water
  • 38 oz (4 1/2 cups) canned pumpkin
  • 2 Tbsp ground pumpkin pie spice
  • 16 oz (2 cups) raw pumpkin seeds

Method

  1. Place water, Krusteaz Professional Low Fat All Purpose Muffin Mix, pumpkin and pumpkin pie spice in mixer bowl.
  2. Using a paddle, mix on low speed 1 minute. Scrape bowl.
  3. Continue to mix on low speed 30 seconds or until well blended.
  4. Using #20 scoop, fill prepared muffin pans. Sprinkle raw pumpkin seeds generously over muffin batter.
  5. For convection oven, bake at 350°F 12-14 minutes; for standard oven, bake at 400°F 16-18 minutes or until toothpick inserted into center comes out clean.
