Pork Tonkatsu

Ingredients

  • 5 lb (full box) Krusteaz Professional® Tempura Batter Mix 733-0140
  • 90 fl oz (11 1/4 cups) cold water
  • 11 lb boneless, uncooked pork cutlets, 4 oz each
  • 34 oz (7 cups) panko bread crumbs

Method

  1. Place water in mixer bowl; add Krusteaz Professional Tempura Batter Mix.
  2. Blend with wire whip just until blended.
  3. Coat pork with batter. Lightly drain off excess batter.
  4. Coat battered pork with panko bread crumbs.
  5. Fry in 350°F oil to the proper internal temperature, about 4 - 4 1/2 minutes. Serve with plum dipping sauce, if desired.
