4, 7 gram packets yeast (included in box)
32 oz (4 cups) warm water (105°-115°F)
8 oz (1 cup) pizza sauce
20 oz (2 1/2 cups) shredded mozzarella cheese
20 oz (2 1/2 cups) diced, fresh mozzarella cheese
20 oz (2 1/2 cups) pepperoni slices
4 oz (1/2 cup) olive oil
4 oz (1/2 cup grated Asiago cheese
Method
Place water in mixer bowl. Add Krusteaz Professional All Purpose Yeast Roll Mix then yeast. Using a dough hook, mix on low speed 1 minute. Scrape bowl.
Change to medium speed and mix 4 minutes.
Place dough on floured surface, cover and rest for 10 minutes.
Scale dough into 28 oz pieces and roll into 20 x 12-inch rectangles.
Spread 2 oz pizza sauce over each rectangle then sprinkle with 5 oz each of shredded mozzarella, fresh mozzarella and pepperoni slices.
Roll into 12-inch logs. Seal the edge and cut into 1-inch slices.
Place dough pieces against each other on greased or paper-lined pans.
Proof for 1 hour or until double in size.
For convection oven, bake at 325°F 18-20 minutes; for standard oven, bake at 375°F 20-22 minutes.
Brush with olive oil then sprinkle Asiago cheese over top.
