Peaches & Cream Whoopie Pies

Makes 30 whoopie pie sandwiches

Ingredients

  • 66 oz (1 full pouch) Krusteaz Professional® Ready to Bake Sweet Cream Vanilla Cake & Muffin Batter #732-0625
  • 3 cups finely diced peaches, canned or fresh
Filling
  • Cream cheese icing
  • ½ cup peaches, finely diced

Method

  1. Remove Krusteaz Professional Ready to Bake Sweet Cream Vanilla Cake & Muffin batter from refrigerator. No slacking required.
  2. Cut open one end of the pouch and squeeze batter into a bowl. Stir in peaches.
  3. Prepare whoopie pie pan by lightly greasing with butter and flour or non-stick spray.
  4. Cut open one end of the pouch and portion 2 Tbsp batter into each cavity of the pan.
  5. For convection oven, bake at 300°F at low fan speed for 8-10 minutes, turning pan halfway through bake time. Allow cakes to cool completely before removing from pan.
  6. Blend cream cheese frosting with peaches.
  7. To assemble spread peach cream cheese mixture on one cake and sandwich with another cake.
