Molten Lobster Biscuits

Makes about 32 portions

Ingredients

  • 5 lb (full box) Krusteaz Professional® Buttermilk Biscuit Mix 734-0320
  • 52 oz (6 1/2 cups) buttermilk
  • 1 lb (4 cups) cheddar cheese, shredded
  • 2 lb (8 cups) Monterey Jack cheese, shredded
  • 1 lb (4 cups) lobster meat
  • 8 oz (2 cups) butter, melted
  • 3 Tbsp fresh parsley, ground

Method

  1. Place buttermilk, Krusteaz Professional Buttermilk Biscuit Mix and cheddar cheese in a mixer bowl.
  2. Using a paddle, mix on low speed for 30 seconds.
  3. Scoop dough using a #24 scoop into greased, ovenable 6 oz ramekin. Top with lobster meat and Monterey Jack cheese. Layer on another scoop of biscuit mix.
  4. For convection oven, bake at 375°F 10-12 minutes; for standard oven, bake at 425°F 14-16 minutes.
  5. Stir parsley into melted butter and brush over biscuits immediately after removing from oven.
