Berry Shortcake Shooters

Makes 72, 1 ¾ oz desserts

Ingredients

Biscuits
  • 5 lb (full box) Krusteaz Professional Buttermilk Biscuit Mix 734-0320
  • 3 lb (6 cups) buttermilk
  • 3 Tbsp fresh lemon zest
  • 8 oz (1 cup) egg whites (lightly whipped)
  • 4 oz (1/2 cup) coarse crystal sugar
Filling
  • 1 lb (4 cups) fresh berries
  • 2 lb (8 cups) cream cheese
  • 8 oz (1 can) sweetened, condensed milk

Method

  1. Place water, Krusteaz Professional Buttermilk Biscuit Mix and lemon zest in a mixer bowl.
  2. Using a paddle, mix on low speed for 30 seconds.
  3. Scoop dough using #20 scoop onto parchment lined baking sheet. Brush with egg whites then sprinkle with sugar.
  4. For convection oven, bake at 400°F 10-13 minutes; for standard oven, bake at 450°F 10-13 minutes.
  5. Blend cream cheese and condensed milk.
  6. Cut biscuits in chunks, layer with berries and cream cheese in small mason jars.
