Limeade Bars

Makes 96, 2-inch bars

Ingredients

Crust
  • 5 lb (full box) Krusteaz Professional® All Purpose Cookie Mix 732-0642
  • 8 fl oz (1 cup) water
Topping
  • 30 oz (15) eggs
  • 5 oz (2/3 cup) sugar
  • 3 oz (2/3 cup) all-purpose flour
  • 1 tsp baking powder
  • 12 oz frozen limeade concentrate, thawed

Method

  1. For crust, place water and Krusteaz Professional All Purpose Cookie Mix in mixer bowl.
  2. Using a paddle, mix on low speed 1 minute or until dough forms around paddle.
  3. Press dough into full sheet pan.
  4. For convection oven, bake at 300°F 8-10 minutes; for standard oven, bake at 350°F 8-10 minutes.
  5. For topping, place eggs, sugar, flour and baking powder in mixer bowl.
  6. Using a paddle, mix on low speed 30 seconds or until blended. Scrape bowl.
  7. Continue to mix on low speed 30 seconds while slowly adding limeade concentrate. Scrape bowl then mix 1 additional minute. Pour topping over baked crust.
  8. For convection oven, bake at 300°F 12-15 minutes; for standard oven, bake at 350°F 15-18 minutes.
  9. Cool completely. Sprinkle with powdered sugar, if desired.
