Ham and Cheese Pancake Muffins

Makes 6, 4 oz muffins

Ingredients

  • 1 lb Krusteaz Professional® Protein Buttermilk Pancake Mix 731-0115
  • 20 fl oz (2 1/2 cups) cool water
  • 8 oz (1 cup) diced, smoked ham
  • 2 oz (1/4 cup) chopped green onion
  • 8 oz (1 cup) shredded cheddar cheese
  • 2 oz (1/4 cup) melted butter

Method

  1. Mix Krusteaz Professional Protein Buttermilk Pancake Mix and water together using a wire whip until well-blended. Fold in ham, green onion and cheese.
  2. Pour batter onto a lightly greased or paper lined standard muffin tins.
  3. Bake in a preheated 350°F convection oven for approximately 10-12 minutes.
  4. Remove from oven and brush with melted butter.
