Cranberry Orange Oat Bran Muffins
Makes 5 1/4 dozen muffins
Ingredients
- 5 lb (full box) Krusteaz Professional® Oat Bran Muffin Mix 734-0250
- 50 fl oz (5 3/4 cups) orange juice
- 10 oz (2 cups) sweetened, dried cranberries
- 3 oz (1 cup) instant oatmeal
- 3 Tbsp grated orange zest
Method
- Place orange juice, Krusteaz Professional Oat Bran Muffin Mix and remaining ingredients in mixer bowl.
- Using a paddle, mix on low speed 30 seconds. Scrape bowl.
- Continue to mix on low speed 30 seconds.
- Using #20 scoop, fill prepared muffin pans.
- For convection oven, bake at 350°F 12-14 minutes, for standard oven, bake at 400°F 16-18 minutes.
