Banana Snack Cake

Makes 64, 3x2-inch servings

Ingredients

  • 32 fl oz (4 cups) water
  • 5 lb (full box) Krusteaz Professional® Corn Muffin Mix 734-0160
  • 24 oz (2 1/2 cups) mashed bananas
  • 1 1/2 tablespoons ginger
  • 1 1/2 tablespoons cinnamon

Method

  1. Place water in mixer bowl. Add Krusteaz Professional Corn Muffin Mix and remaining ingredients.
  2. Using a paddle, mix on low speed 30 seconds. Scrape bowl and paddle.
  3. Continue to mix on low speed 30 seconds.
  4. Scale batter into prepared 24 x 16 x 2-inch sheet pan.
  5. For convection oven, bake at 300°F 15-20 minutes; for standard oven, bake at 350°F 20-25 minutes or until toothpick inserted into center comes out clean.
