1. Place water in mixer bowl. Add mix then yeast. Using a dough hook, mix on low speed 1 minute. Scrape bowl. 2. Change to medium speed and mix 4 minutes. 3. Place dough on floured surface, cover and rest dough for 10 minutes. 4. Scale into 2 oz pieces and shape as desired. Place on greased or paper-lined pans. Proof 1 hour or until double in size.

TRADITIONAL YEAST ROLL DIRECTIONS FOR ENHANCED TEXTURE: Follow steps 1 and 2. Place dough in greased bowl. Cover and let rise for 1 hour or until double in size. Scale into 2 oz pieces and shape as desired. Place on greased or paper-lined pans. Proof additional hour or until double in size. CINNAMON ROLL RECIPE: Follow steps 1-3 above or use traditional directions. Scale into 28 oz pieces and roll into 20 x 12-inch rectangles. Over each rectangle, spread 1 oz melted butter then sprinkle 8 oz Krusteaz Cinnamon Streusel Topping Mix 732-0900. Roll into 12-inch logs. Seal the edge and cut into 1-inch slices. Place 1 inch apart on greased or paper-lined pans. Proof 1 hour or until double in size. Drizzle with icing after baking. HIGH ALTITUDE: For full batch, add 1 1/2 oz (1/3 cup) all-purpose flour and an additional 4 oz (1/2 cup) water. Prepare and bake as directed.

This mix should perform for its intended use for 12 months in cool dry storage. Hot, humid storage may reduce shelf life. Each shipment will be properly controlled and handled to prevent adulteration as defined in the Food, Drug and Cosmetic Act (section 402).
