Sriracha Chicken Bites

Ingredients

    10 lb Boneless Skinless Chicken Breasts, cut into 2″ cubes

    20 oz (2.5 cups) Sriracha sauce

    5 lb (full box) Krusteaz Professional® Tempura Batter Mix 733-0140

    6 ¼ lb (3qt + ½ cup) ice cold water

Method

    1.Pre-heat oil to 360-375ºF. Place ice cold water in bowl and add Krusteaz Professional Tempura Batter Mix. Using a wire whisk, mix until batter is smooth. Do not overmix.

    2. Mix raw chicken bites with Sriracha sauce, coating all pieces evenly.

    3. Dip chicken bites in prepared batter and drain 5 seconds.

    4. Fry chicken until golden brown and the internal temperature is 165ºF. Serve immediately.
