Pumpkin Spice Bread Pudding

Ingredients

    Bread:

    5 lb (full box) Krusteaz Professional All Purpose Pumpkin Spice Baking Mix 734-0293

    5 eggs

    12 oz (1 1/4 cups) cold water

    Custard:

    1 Tbsp vanilla

    16 egg yolks

    1 lb (2 cups) granulated sugar

    2 quarts (8 cups) heavy cream

    Topping:

    16 oz (2 cups) caramel sauce

Method

    1. Place eggs and water and in mixer bowl. Add mix.

    2. Whisk until well blended. Do not over-mix.

    3. Pour into prepared full sheet pan with cake risers.

    4. For convection oven, bake at 350°F for 16-18 minutes; for standard oven, bake at 375°F for 18-20 minutes.

    5. For custard, place vanilla, egg yolks, sugar and heavy cream in mixer bowl. Whip until well incorporated.

    6. Pour custard over top of the pumpkin bread. Return to oven.

    7. For convection oven, bake at 350°F for 20-22 minutes; for standard oven, bake at 375°F for 22-24 minutes.

    8. Drizzle caramel sauce over top.
