Fiesta Chicken Cornbread Bake

Ingredients

    5 lb (full box) Krusteaz Professional® Southern Style Cornbread Mix 734-0540

    50 fl oz (6 1/4 cups) water

    90 oz (18 cups) diced, cooked chicken

    54 oz (6 cups) salsa

    24 oz (6 cups) shredded cheddar cheese

Method

    1. Place water and Krusteaz Professional Southern Style Cornbread Mix in mixer bowl.

    2. Using a paddle, mix on low speed 1 minute. Scrape bowl. Continue to mix on low speed 1 minute. Set aside.

    3. In separate bowl, blend chicken and salsa. Scale chicken mixture into 2, prepared 20x12x2 1/2-inch steam table pans.

    4. Sprinkle 12 oz (3 cups) cheese over each chicken layer.

    5. Scale cornbread batter equally over cheese.

    6. For convection oven, bake at 350°F 35-40 minutes; for standard oven, bake at 400°F 40-45 minutes.
