Cheddar Pancakes With Apples & Bacon

Ingredients

    Topping: 

    100 oz (25 cups) apples, peeled and thinly sliced

    6 oz (3/4 cup) butter

    2 1/2 oz (1/3 cup) sugar

    1 1/2 teaspoons cinnamon

    40 oz bacon

    Pancakes:

    5 lb (full bag) Krusteaz Professional® Buttermilk Pancake Mix 731-0120

    88 fl oz (11 cups) water

    20 oz (5 cups) shredded cheddar cheese

Method

    Topping:

    1. Sauté apple slices in butter over medium heat until tender, about 15 minutes.

    2. Add sugar and cinnamon and mix thoroughly; set aside.

    3. Cook bacon until crisp; place on paper towels to drain. Crumble bacon and add to apple mixture. Set aside and keep warm.

    Pancakes:

    4. Place water, Krusteaz Professional Buttermilk Pancake Mix and cheddar cheese in mixing bowl. Mix with a wire whip for 30 seconds or until batter is smooth (don’t over mix).

    5. Scale batter using #20 scoop (1.7 oz batter) onto preheated, 375°F griddle.

    6. Cook pancakes 10 minutes on each side. Turn only once. Serve with warm apple bacon topping.
